Salmon & Kale Cakes

Ingredients:

  • 5-6 frozen or fresh fillets of wild-caught salmon

  • 2 Eggs

  • 3 cups of kale

  • 2 tablespoons of capers

  • 1/4 cup of fresh parsley

  • 1 tablespoon of fresh dill

  • 1 clove of minced garlic

  • 1 tablespoon of lemon juice

Instructions:

  1. Cook salmon fillets at 350 degrees for 8-10 minutes

  2. Cook kale in a pan with olive oil for 5-8 minutes

  3. In a large mixing bowl, combine all ingredients

  4. Heat a large skillet at medium heat. Use an ice cream scoop for easy portioning and flatten into 1/2” patties.

  5. Cook for 3-4 minutes per side

  6. Serve with homemade guacamole or on a salad!
