Salmon & Kale Cakes
Ingredients:
5-6 frozen or fresh fillets of wild-caught salmon
2 Eggs
3 cups of kale
2 tablespoons of capers
1/4 cup of fresh parsley
1 tablespoon of fresh dill
1 clove of minced garlic
1 tablespoon of lemon juice
Instructions:
Cook salmon fillets at 350 degrees for 8-10 minutes
Cook kale in a pan with olive oil for 5-8 minutes
In a large mixing bowl, combine all ingredients
Heat a large skillet at medium heat. Use an ice cream scoop for easy portioning and flatten into 1/2” patties.
Cook for 3-4 minutes per side
Serve with homemade guacamole or on a salad!
